For 2 servings
- 2 whole grain rolls
- 4 slices of vegan bacon
- 1 cup firm tofu, crumbled
- 1 tablespoon nutritional yeast
- 1/2 teaspoon turmeric powder
- Salt and pepper, to taste
- 2 slices vegan cheese
- 1 tablespoon olive oil
- Fresh spinach leaves (optional)
Instructions
Follow these steps for perfect results
- Heat olive oil in a skillet over medium heat.
- Add the vegan bacon and cook until crispy, about 3-4 minutes on each side. Remove and set aside.
- In the same skillet, add the crumbled tofu, nutritional yeast, turmeric, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until heated through.
- Place the vegan cheese slices on top of the tofu mix and cover to melt for 1-2 minutes.
- Toast the whole grain rolls in a toaster or on a skillet until golden.
- Assemble the sandwich by layering the tofu 'egg', crispy bacon, and spinach leaves (if using) on the roll.
- Top with the other half of the roll and serve warm.
