For 2 servings

  • 2 whole grain rolls
  • 4 slices of vegan bacon
  • 1 cup firm tofu, crumbled
  • 1 tablespoon nutritional yeast
  • 1/2 teaspoon turmeric powder
  • Salt and pepper, to taste
  • 2 slices vegan cheese
  • 1 tablespoon olive oil
  • Fresh spinach leaves (optional)

Instructions

Follow these steps for perfect results

  1. Heat olive oil in a skillet over medium heat.
  2. Add the vegan bacon and cook until crispy, about 3-4 minutes on each side. Remove and set aside.
  3. In the same skillet, add the crumbled tofu, nutritional yeast, turmeric, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until heated through.
  4. Place the vegan cheese slices on top of the tofu mix and cover to melt for 1-2 minutes.
  5. Toast the whole grain rolls in a toaster or on a skillet until golden.
  6. Assemble the sandwich by layering the tofu 'egg', crispy bacon, and spinach leaves (if using) on the roll.
  7. Top with the other half of the roll and serve warm.
