  • 14 oz firm tofu, pressed and cubed
  • 1 cup coconut yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons tikka masala spice mix
  • 3 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 can (15 oz) crushed tomatoes
  • 1 can (14 oz) coconut milk
  • 1 tablespoon maple syrup
  • Salt, to taste
  • Fresh cilantro, for garnish
  • Cooked basmati rice or naan, for serving

Instructions

Follow these steps for perfect results

  1. In a bowl, combine the coconut yogurt, lemon juice, and tikka masala spice mix. Add the cubed tofu and marinate for at least 20 minutes.
  2. In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and sautu00e9 until translucent, about 5 minutes.
  3. Stir in the minced garlic and grated ginger, cooking for another 2 minutes until fragrant.
  4. Add the marinated tofu to the skillet and cook until lightly browned on all sides, about 8-10 minutes.
