- 14 oz firm tofu, pressed and cubed
- 1 cup coconut yogurt
- 2 tablespoons lemon juice
- 2 tablespoons tikka masala spice mix
- 3 tablespoons vegetable oil
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 1 can (15 oz) crushed tomatoes
- 1 can (14 oz) coconut milk
- 1 tablespoon maple syrup
- Salt, to taste
- Fresh cilantro, for garnish
- Cooked basmati rice or naan, for serving
Instructions
Follow these steps for perfect results
- In a bowl, combine the coconut yogurt, lemon juice, and tikka masala spice mix. Add the cubed tofu and marinate for at least 20 minutes.
- In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and sautu00e9 until translucent, about 5 minutes.
- Stir in the minced garlic and grated ginger, cooking for another 2 minutes until fragrant.
- Add the marinated tofu to the skillet and cook until lightly browned on all sides, about 8-10 minutes.
- Pour in the crushed tomatoes and coconut milk, then add the maple syrup and salt. Stir well and bring to a simmer.
- Reduce heat and let it simmer for 15-20 minutes, allowing the flavors to meld together.
