  • 14 oz firm tofu, pressed and cubed
  • 1 cup coconut yogurt
  • 2 tablespoons tikka masala spice blend
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 can (14 oz) crushed tomatoes
  • 1 cup coconut milk
  • 1 tablespoon lemon juice
  • Fresh cilantro for garnish
  • Salt to taste

Instructions

Follow these steps for perfect results

  1. In a bowl, combine the tofu cubes with coconut yogurt and tikka masala spice blend. Let it marinate for at least 30 minutes.
  2. Heat vegetable oil in a large pan over medium heat. Add the chopped onion and sautu00e9 until translucent.
  3. Stir in minced garlic and grated ginger, and cook for another minute until fragrant.
  4. Add the marinated tofu to the pan, cooking until golden brown on all sides.
  5. Pour in the crushed tomatoes, coconut milk, and lemon juice. Bring to a simmer and cook for about 15 minutes until the sauce thickens.
  6. Season with salt to taste and remove from heat.
  7. Serve hot, garnished with fresh cilantro over steamed rice or with flatbreads.
