  • 1 block firm tofu
  • 2 cloves garlic, minced
  • 2 medium potatoes, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 cup rice
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

Follow these steps for perfect results

  1. Press tofu to remove excess moisture and cut into cubes.
  2. Cook rice according to package instructions.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add garlic and sautu00e9 for 1 minute.
  5. Add diced potatoes and cook until slightly tender, about 5-7 minutes.
  6. Stir in carrots and celery, cooking for another 5 minutes.
