- 2 cloves garlic, minced
- 2 medium potatoes, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 cup rice
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
Follow these steps for perfect results
- Press tofu to remove excess moisture and cut into cubes.
- Cook rice according to package instructions.
- Heat olive oil in a large skillet over medium heat.

- Add diced potatoes and cook until slightly tender, about 5-7 minutes.
- Stir in carrots and celery, cooking for another 5 minutes.
