For 4 servings

  • 1 block firm tofu, crumbled
  • 1 tablespoon turmeric powder
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon nutritional yeast
  • 1 tablespoon chopped fresh cilantro
  • 4 slices whole grain bread
  • 1 cup almond milk
  • 1 tablespoon coconut sugar
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon coconut oil
  • 1 large eggplant, sliced thinly
  • 1 teaspoon smoked paprika

Instructions

Follow these steps for perfect results

  1. In a bowl, mix crumbled tofu with turmeric, soy sauce, lime juice, nutritional yeast, cilantro, salt, and pepper. Set aside.
