  • 1 cup shredded vegan mozzarella cheese

  • 1 teaspoon Italian seasoning

  1. Preheat the oven to 400°F (200°C).
  2. Slice the eggplant into 1/2-inch thick rounds and sprinkle with salt. Let sit for 10 minutes to draw out moisture, then rinse and pat dry.
  3. Brush both sides of the eggplant slices with olive oil and place them on a baking sheet.
  4. Bake the eggplant slices for 15 minutes, flipping halfway through, until tender and slightly golden.
