Ingredients

For 2 servings

  • 2 plant-based burger patties
  • 2 slices of vegan cheese
  • 1 large onion, sliced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 2 whole grain burger buns
  • Lettuce and tomato, for toppings
  • 2 large potatoes, cut into fries
  • 1 tablespoon nutritional yeast (optional)
  • Paprika, for seasoning

Instructions

Follow these steps for perfect results

  1. Preheat the oven to 425°F (220°C).
  2. Toss the potato fries in a bowl with olive oil, salt, pepper, and paprika. Spread them out on a baking sheet.
  3. Bake the fries for 25 minutes, flipping halfway through until golden and crispy.
  4. While fries are baking, heat olive oil in a skillet over medium heat. Add the sliced onions and a pinch of salt.
  5. Cook the onions, stirring frequently, until they are caramelized (about 10-15 minutes).
  6. In another skillet, cook the plant-based burger patties according to package instructions.
  7. During the last minute of cooking, place a slice of vegan cheese on each patty, covering to melt.
  8. Toast the burger buns lightly in a separate pan or oven.
  9. Assemble the burgers by placing the lettuce and tomato on the bottom half of the bun, followed by the cheeseburger patty, and a generous scoop of caramelized onions.
  10. Top with the other half of the bun and serve with crispy fries on the side.
