Ingredients

For 4 servings

  • 1 cup cooked black beans, mashed
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 4 whole grain burger buns
  • 4 slices plant-based cheese
  • 4 large portobello mushrooms, stems removed
  • 1/4 cup vegan cream cheese
  • 1/4 cup chopped fresh herbs (parsley, thyme)
  • Olive oil for brushing

Instructions

Follow these steps for perfect results

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix together the mashed black beans, breadcrumbs, onion, garlic, soy sauce, smoked paprika, cumin, salt, and pepper until well combined.
  3. Form the mixture into 4 patties.
  4. Heat a non-stick pan over medium heat and cook the patties for 5-6 minutes on each side until browned.
  5. While the patties are cooking, prepare the mushrooms by mixing the vegan cream cheese with chopped herbs. Stuff each mushroom cap with the mixture.
  6. Place the stuffed mushrooms on a baking sheet and brush with olive oil. Bake for 15 minutes until tender.
  7. In the last few minutes of cooking the burger patties, place a slice of plant-based cheese on top of each patty to melt.
  8. Toast the burger buns on the grill or in a toaster.
  9. Assemble the cheeseburgers by placing a patty on each bun and serving with the stuffed mushrooms on the side.
