- 1 cup cooked black beans, mashed
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 tbsp soy sauce
- 1 tsp smoked paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- 4 whole grain burger buns
- 4 slices plant-based cheese
- 4 large portobello mushrooms, stems removed
- 1/4 cup vegan cream cheese
- 1/4 cup chopped fresh herbs (parsley, thyme)
- Olive oil for brushing
Instructions
Follow these steps for perfect results
- Preheat your oven to 375°F (190°C).
- In a bowl, mix together the mashed black beans, breadcrumbs, onion, garlic, soy sauce, smoked paprika, cumin, salt, and pepper until well combined.
- Form the mixture into 4 patties.
- Heat a non-stick pan over medium heat and cook the patties for 5-6 minutes on each side until browned.
- While the patties are cooking, prepare the mushrooms by mixing the vegan cream cheese with chopped herbs. Stuff each mushroom cap with the mixture.
- Place the stuffed mushrooms on a baking sheet and brush with olive oil. Bake for 15 minutes until tender.
- In the last few minutes of cooking the burger patties, place a slice of plant-based cheese on top of each patty to melt.
- Toast the burger buns on the grill or in a toaster.
- Assemble the cheeseburgers by placing a patty on each bun and serving with the stuffed mushrooms on the side.
