- 1 can black beans, drained and rinsed
- 1 cup cooked quinoa
- 1/2 cup breadcrumbs (gluten-free if desired)
- 1/2 onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp smoked paprika
- Salt and pepper to taste
- 4 slices plant-based cheese
- 4 Cuban rolls
- 1/2 cup dill pickles, sliced
- 1/4 cup mustard
- 1/4 cup vegan mayonnaise
- Fresh cilantro for garnish
Instructions
Follow these steps for perfect results
- In a bowl, mash the black beans with a fork until mostly smooth.
- Add cooked quinoa, breadcrumbs, chopped onion, garlic, cumin, smoked paprika, salt, and pepper to the bowl, mixing until combined.
- Form the mixture into 4 patties.
- Heat a non-stick skillet over medium heat and cook the patties for about 5-7 minutes on each side until golden brown.
- During the last minute of cooking, place a slice of plant-based cheese on each patty and cover the skillet with a lid to melt the cheese.
- While the patties are cooking, slice the Cuban rolls in half and spread mustard on the bottom half and vegan mayonnaise on the top half.
- Once the patties are cooked, place each patty on the bottom half of the rolls.
- Top each patty with dill pickles and fresh cilantro, then close the sandwiches.
