  • 1 can black beans, drained and rinsed
  • 1 cup cooked quinoa
  • 1/2 cup breadcrumbs (gluten-free if desired)
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 4 slices plant-based cheese
  • 4 Cuban rolls
  • 1/2 cup dill pickles, sliced
  • 1/4 cup mustard
  • 1/4 cup vegan mayonnaise
  • Fresh cilantro for garnish

Instructions

Follow these steps for perfect results

  1. In a bowl, mash the black beans with a fork until mostly smooth.
  2. Add cooked quinoa, breadcrumbs, chopped onion, garlic, cumin, smoked paprika, salt, and pepper to the bowl, mixing until combined.
  3. Form the mixture into 4 patties.
  4. Heat a non-stick skillet over medium heat and cook the patties for about 5-7 minutes on each side until golden brown.
  5. During the last minute of cooking, place a slice of plant-based cheese on each patty and cover the skillet with a lid to melt the cheese.
  6. While the patties are cooking, slice the Cuban rolls in half and spread mustard on the bottom half and vegan mayonnaise on the top half.
  7. Once the patties are cooked, place each patty on the bottom half of the rolls.
  8. Top each patty with dill pickles and fresh cilantro, then close the sandwiches.
