For 4 servings
- 1 cup black beans, drained and rinsed
- 1 cup cooked quinoa
- 1/2 cup breadcrumbs
- 1/2 cup diced onions
- 1 cup mushrooms, diced
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 4 slices vegan cheese
- 4 whole-grain burger buns
- Olive oil for sautu00e9ing
- Lettuce, tomato, and pickles for topping
Instructions
Follow these steps for perfect results
- In a mixing bowl, mash the black beans with a fork until mostly smooth.
- Add the cooked quinoa, breadcrumbs, diced onions, garlic powder, smoked paprika, salt, and pepper to the bowl. Mix until well combined.
- Form the mixture into 4 burger patties.
- Heat a skillet over medium heat and add a little olive oil. Sautu00e9 the mushrooms and onions until soft and caramelized, about 5-7 minutes. Remove from pan and set aside.
- In the same skillet, add more olive oil if needed and cook the burger patties for about 5 minutes on each side, or until golden brown.
- Top each patty with a slice of vegan cheese and cover to melt for 1-2 minutes.
- Toast the burger buns in the skillet until golden brown.
- Assemble the burgers with lettuce, tomato, sautu00e9ed mushrooms and onions, and any other desired toppings. Serve hot.
