Ingredients

For 4 servings

  • 1 cup black beans, drained and rinsed
  • 1 cup cooked quinoa
  • 1/2 cup breadcrumbs
  • 1/2 cup diced onions
  • 1 cup mushrooms, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 slices vegan cheese
  • 4 whole-grain burger buns
  • Olive oil for sautu00e9ing
  • Lettuce, tomato, and pickles for topping

Instructions

Follow these steps for perfect results

  1. In a mixing bowl, mash the black beans with a fork until mostly smooth.
  2. Add the cooked quinoa, breadcrumbs, diced onions, garlic powder, smoked paprika, salt, and pepper to the bowl. Mix until well combined.
  3. Form the mixture into 4 burger patties.
  4. Heat a skillet over medium heat and add a little olive oil. Sautu00e9 the mushrooms and onions until soft and caramelized, about 5-7 minutes. Remove from pan and set aside.
  5. In the same skillet, add more olive oil if needed and cook the burger patties for about 5 minutes on each side, or until golden brown.
  6. Top each patty with a slice of vegan cheese and cover to melt for 1-2 minutes.
  7. Toast the burger buns in the skillet until golden brown.
  8. Assemble the burgers with lettuce, tomato, sautu00e9ed mushrooms and onions, and any other desired toppings. Serve hot.
