- 14 oz firm tofu, pressed and cubed
- 1 cup coconut yogurt
- 2 tablespoons tikka masala spice blend
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 can (14 oz) crushed tomatoes
- 1 cup coconut milk
- 1 tablespoon lemon juice
- Fresh cilantro for garnish
- Salt to taste
Instructions
Follow these steps for perfect results
- In a bowl, combine the tofu cubes with coconut yogurt and tikka masala spice blend. Let it marinate for at least 30 minutes.
- Heat vegetable oil in a large pan over medium heat. Add the chopped onion and sautu00e9 until translucent.
- Stir in minced garlic and grated ginger, and cook for another minute until fragrant.
- Add the marinated tofu to the pan, cooking until golden brown on all sides.
- Pour in the crushed tomatoes, coconut milk, and lemon juice. Bring to a simmer and cook for about 15 minutes until the sauce thickens.
- Season with salt to taste and remove from heat.
- Serve hot, garnished with fresh cilantro over steamed rice or with flatbreads.
