- 14 oz firm tofu, pressed and cubed
- 2 tablespoons coconut oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 1 tablespoon red curry paste
- 1 can coconut milk (400 ml)
- 1 tablespoon soy sauce
- 1 tablespoon maple syrup
- 1 cup green peas (fresh or frozen)
- 1 teaspoon ground turmeric
- 1 teaspoon garam masala
- 1 tablespoon lime juice
- Salt to taste
- Fresh cilantro for garnish
- Cooked jasmine rice for serving
Instructions
Follow these steps for perfect results
- In a bowl, toss cubed tofu with soy sauce, turmeric, and half of the lime juice. Let it marinate for at least 10 minutes.
- Heat coconut oil in a large skillet over medium heat. Add chopped onion and sautu00e9 until translucent.
- Stir in minced garlic and grated ginger, cooking for an additional minute.
- Add red curry paste and cook for another minute until fragrant.
- Pour in coconut milk, bring to a simmer, and mix well.
- Add marinated tofu, green peas, and garam masala. Stir and let simmer for 15-20 minutes until the sauce thickens.
- Taste and add salt and remaining lime juice as needed.
- Serve hot over jasmine rice, garnished with fresh cilantro.
