  • 14 oz firm tofu, pressed and cubed
  • 2 tablespoons coconut oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tablespoon red curry paste
  • 1 can coconut milk (400 ml)
  • 1 tablespoon soy sauce
  • 1 tablespoon maple syrup
  • 1 cup green peas (fresh or frozen)
  • 1 teaspoon ground turmeric
  • 1 teaspoon garam masala
  • 1 tablespoon lime juice
  • Salt to taste
  • Fresh cilantro for garnish
  • Cooked jasmine rice for serving

Instructions

Follow these steps for perfect results

  1. In a bowl, toss cubed tofu with soy sauce, turmeric, and half of the lime juice. Let it marinate for at least 10 minutes.
  2. Heat coconut oil in a large skillet over medium heat. Add chopped onion and sautu00e9 until translucent.
  3. Stir in minced garlic and grated ginger, cooking for an additional minute.
  4. Add red curry paste and cook for another minute until fragrant.
  5. Pour in coconut milk, bring to a simmer, and mix well.
  6. Add marinated tofu, green peas, and garam masala. Stir and let simmer for 15-20 minutes until the sauce thickens.
  7. Taste and add salt and remaining lime juice as needed.
  8. Serve hot over jasmine rice, garnished with fresh cilantro.
