- 14 oz firm tofu, pressed and drained
- 1/4 cup breadcrumbs
- 2 tbsp soy sauce
- 1 tbsp nutritional yeast
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- 1/2 tsp salt
- 4 slices vegan cheese
- 4 burger buns
- 1 cup lettuce, shredded
- 1 tomato, sliced
- 1/2 onion, sliced
- 2 medium eggplants, sliced into rounds
- 1 cup marinara sauce
- 1 cup vegan mozzarella cheese, shredded
- 4 large potatoes, cut into fries
- 1 tbsp olive oil for fries
- Salt and pepper to taste
- Vegan mayonnaise, for serving
Instructions
Follow these steps for perfect results
- Preheat your oven to 425°F (220°C).
- In a bowl, crumble the pressed tofu and mix in breadcrumbs, soy sauce, nutritional yeast, olive oil, garlic, smoked paprika, black pepper, and salt. Form into 4 burger patties.
- Place the patties on a lined baking tray and bake in the preheated oven for 25 minutes, flipping halfway through.
- While the patties are baking, prepare the fries. Toss the potato fries with olive oil, salt, and pepper, then spread them on another baking tray and bake for 25-30 minutes until crispy.
- For the eggplant parmigiana, layer the eggplant rounds on a baking dish, season with salt, and let them sit for 15 minutes to draw out moisture. Rinse and pat dry.
- Place a layer of eggplant on the bottom of the baking dish, pour half the marinara sauce over, and sprinkle with vegan mozzarella cheese. Repeat layers with remaining eggplant, sauce, and cheese.
- Bake the eggplant parmigiana in the oven for the last 25 minutes of the tofu burgers baking time.
- Once the tofu is done, place a slice of vegan cheese on each patty and return to the oven for 5 minutes until melted.
- Assemble the burgers by placing the patty on a bun, adding lettuce, tomato, and onion. Serve with a dollop of vegan mayonnaise.
- Plate the burgers with a side of loaded fries and a generous serving of eggplant parmigiana on the side.
