  • 14 oz firm tofu, pressed and drained
  • 1/4 cup breadcrumbs
  • 2 tbsp soy sauce
  • 1 tbsp nutritional yeast
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 4 slices vegan cheese
  • 4 burger buns
  • 1 cup lettuce, shredded
  • 1 tomato, sliced
  • 1/2 onion, sliced
  • 2 medium eggplants, sliced into rounds
  • 1 cup marinara sauce
  • 1 cup vegan mozzarella cheese, shredded
  • 4 large potatoes, cut into fries
  • 1 tbsp olive oil for fries
  • Salt and pepper to taste
  • Vegan mayonnaise, for serving

Instructions

Follow these steps for perfect results

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, crumble the pressed tofu and mix in breadcrumbs, soy sauce, nutritional yeast, olive oil, garlic, smoked paprika, black pepper, and salt. Form into 4 burger patties.
  3. Place the patties on a lined baking tray and bake in the preheated oven for 25 minutes, flipping halfway through.
  4. While the patties are baking, prepare the fries. Toss the potato fries with olive oil, salt, and pepper, then spread them on another baking tray and bake for 25-30 minutes until crispy.
  5. For the eggplant parmigiana, layer the eggplant rounds on a baking dish, season with salt, and let them sit for 15 minutes to draw out moisture. Rinse and pat dry.
  6. Place a layer of eggplant on the bottom of the baking dish, pour half the marinara sauce over, and sprinkle with vegan mozzarella cheese. Repeat layers with remaining eggplant, sauce, and cheese.
  7. Bake the eggplant parmigiana in the oven for the last 25 minutes of the tofu burgers baking time.
  8. Once the tofu is done, place a slice of vegan cheese on each patty and return to the oven for 5 minutes until melted.
  9. Assemble the burgers by placing the patty on a bun, adding lettuce, tomato, and onion. Serve with a dollop of vegan mayonnaise.
  10. Plate the burgers with a side of loaded fries and a generous serving of eggplant parmigiana on the side.
